 BLUEBERRY PANCAKE



When I first started the Paleo way of eating, I was excited with recipes and possibilities. I still am excited. This is one of the best pancake recipe I found. It is very simple and so delicious.
The first time I made, I putted bananas instead of blueberries. That's all I had at home. So this is a very versatile recipe. I like my pancakes a little darker as you can see, but adjusting the heat to your like is OK, just don't put the batter on a cold skillet nor too hot.
Here is the recipe, play with it, have fun with flavors, fruits, shapes,....

Dry ingredients:
1/2 cup tapioca flour
1/2 cup coconut flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon sea salt (fine grain)






Wet ingredients:
3 large eggs
3/4 cup of coconut or unsweetened almond milk
1 tablespoon organic honey, maple or agave 
1/2 tablespoon lemon or lime juice
1 teaspoon good vanilla extract

                                                                                    
1/2 cup of fresh blueberries or any other fruit                                                                                     of your choice

mix all the dry ingredients together, in another bowl whisk the eggs, then put the rest of the wet ingredients and whisk until all is blended. Pour over the dry ingredients and mix the all together. Do not panic, it is a very thick batter. I thought something was wrong. 
Heat up a skillet, grease with coconut oil and pour the batter, put the blueberries on top of the batter, wait until you see small bubbles on the top of it and flip, let it cook for about 4 minutes and they are done.
Pour some grade B organic maple syrup and enjoy it. I didn't have any maple at home, so I just topped with a little honey.

Tips about the ingredients: the tapioca flour you can find in any grocery store, but the coconut I had a a little hard time. I looked at all the grocery stores close to my house, there is no Whole Foods close to where I live, I found it in one of them, but it was very expensive. I ordered from Amazon.com. SWEET POTATO AND BACON HASH WITH POACHED EGG
HASH DE BATATA DOCE COM BACON E OVO POCHE


This was such a nice breakfast, and very easy to make.
Here is the recipe:
3 slices of bacon chopped
1 medium onion diced
1 garlic clove minced
1 large sweet potato small diced
1 tbsp lemon juice
salt, pepper, red pepper flakes and parsley to taste.
Heat up a skillet, put the chopped bacon, saute for about 5 minutes, add the onions, cook till the onions are translucent, then the garlic, the pepper flakes,stir a little, put sweet potatoes, sprinkle salt and pepper, and let it cook till they are soft. Turn off the heat, put the lemon juice and parsley. Serve with the poached egg.
Feel free to cook the egg anyway you like. I love poached eggs.

Esse cafe da manha e uma delicia e bem simples de fazer.
Segue a receita:
3 fatias de bacon
1 cebola media picada
1 dente de alho picado
1 batata doce cortada em cubos
1 colher de sopa de suco de limao
sal, pimenta do reino, pimenta calabresa, e salsinha a gosto.
Aqueca a frigideira, coloque o bacon picado, depois a cebola, quando ficarem translucidas, adcione o alho e a pimenta calabresa, depois a batata. Deixe cozinhar ate ficarem macias. Desliqgue o foto, coloque o suco de limao, a salsinha e sirva com ovo poche. Pode cozinhar o ovo da forma desejada, eu gosto com o ovo poche.

Hi all,

I decided to create this blog to share my experiments and learning process of Paleo kitchen. I just started trying recipes this week, and I am so impressed with the flavors, textures, ingredients,....
I am very excited with this and I would love you to be a part of this journey.
First let me introduce myself. I am a 45 years old Brazilian pastry chef in Manhattan, NY. I love the company I work for and I absolutely love what I do.
I will walk you through what is going on in my life.
A few months ago I rediscovered my spirituality, I am studying, reading, changing the way I see myself, friends, family, happiness, hard times, doubts, faith....
Because of those changes, I started taking care of myself. I went to see a doctor. I have hernia and I need a surgery, he asked me to lose at least 20 pounds in 2 months before getting under the knife.When you are overweight the risk of complications are much bigger. That helped me to make the decision of changing my diet and lifestyle.
I found this book at Costco and the recipes looked interesting and healthy. I bought the book, got home and looked for more information about the Paleo diet and decided to try it out. After the first few recipes from this amazing book, I got hooked. I tend to change a few things,I am a chef and can't help myself. I have been working in kitchen for the last 15 years. When you are a chef, it is really hard not to change a little bit the recipes you come across.
There you go, this is a little about myself. Again, this is about testing recipes, getting exposed to new ingredients, and not about my spiritual or weight loss journey.
Lets begin.
